Coconut Macadamia Mulberry Muffins


These....are addicting. They really don't even need an intro. So without further ado...enjoy, my friends!

Coconut Macadamia Mulberry Muffins

Ingredients

1. 1 cup coconut flour

2. 1/2 cup ground flaxseed

3. 2 T psyllium husk powder

4. 2 tsp ground ginger, plus more for garnish

5. 2 T coconut oil, melted

6. 1 + 3/4 cup Anna's Organics 1-ingredient Mylk

7. 50 drops Anna's Organics pure, hand-grown liquid stevia

8. 3/4 cup mulberries, plus more for garnish

9. 1 tsp aluminum-free baking powder

Method

1. Combine all dry ingredients and set aside.

2. whisk in melted coconut oil, milk, and stevia. Stir very well until a thick, slightly spongy batter forms.

3. Scoop about 3-3 +1/2 T of batter into hands and roll into a ball. Place in a silicone muffin cup. Repeat for 10 muffins.

4. Garnish muffins with extra mulberries and ground ginger. Bake at 350 degrees for 35 minutes. Remove from oven and let cool 15 minutes.
