Ravishing Raspberry-Chia Jam


I don't know about you, but toast 'n jam was one of my all-time favorite breakfasts growing up. I wasn't a huge cereal girl (no Frosted Flakes in our household anyway...my mom would've never allowed that!), but I could eat toast and jam for breakfast every single day...and never get sick of it. When I started becoming more health-conscious around age 13, I gave up my beloved toast and jam because, well, I couldn't find a jam that had clean enough ingredients for my liking (no pectin, please...). Then I discovered CHIA SEEDS...and this recipe was born! It's one of my original recipes...I was 14 when I created it! But it will be a forever favorite...and I think it will be for you, too. Ravishing Raspberry-Chia Jam

Ingredients

1. 2 cups frozen raspberries, thawed

2. 2 T chia seeds

3. 2 T coconut water*

4. 2 T yacon syrup**

5. 1 tsp fresh lemon juice

6. 1/4 tsp vanilla bean powder***

Method

1. Place frozen raspberries in a large bowl and let thaw completely.

2. When raspberries are thawed and resting in their juice, add to a large blender or food processor along with coconut water, yacon syrup, lemon juice and pulse until desired consistency is reached (don't liquify...I like mine a little bit textured, so don't blend for too long or you'll risk pureeing it). Add chia seeds and pulse until thoroughly incorporated.

3. Transfer to a large bowl and stir in remaining ingredients. Cover and refrigerate at least 1 hour, or until chilled. Use as desired.

NOTES:

*you don't have to use coconut water as the liquid, but I think it adds a nice flavor and natural sweetness.

**if you don't have any yacon syrup on hand (or if you don't even know what it is...!) don't sweat it--use molasses, pure maple syrup, or Anna's Organics Pure Liquid Stevia--just stay away from processed stevia, sugar, and agave nectar. (Side note--yacon syrup is a fabulous sweetener option! It's a soluble fiber taken from the yacon root plant--because it's a natural prebiotic, it's extremely good for gut health and helps probiotics to flourish! But it's pricey...use it sparingly. Keep some on hand for special treats.)

***If you can't located vanilla powder, sub the powder for 1/2 tsp vanilla extract. The powder is undiluted, so it's flavor is much stronger. But the extract works just as well if you double the amount.
