Almond Butter Granola Bars


Granola bars are great for breakfast--quick, easy, tasty, and generally not messy (unless you sit on it on your way to work...OR its chocolate covered and you leave it in your car on a 99 degree day...hey, it happens...don't judge...). But as yummy as they are, they're not always the healthiest option. Store bought Granola bars are usually LOADED with sugar, preservatives, and even artificial colors and flavors. So what's a health-conscious person like you to do?! Easy. MAKE 'EM YOSELF! These Blueberry-Almond Butter Granola Bars are the BOMB--super delish, and super easy to make. Simply mix, spread, bake...DONE! This recipe fills a large cookie sheet--easily enough Bars for a week's worth of breakfasts (and maybe snacks!). They're great on their own, but they're even better dipped into my Vegan Nogurt (check out my online store to order some!). Either way you choose to enjoy them, I know you will!

Almond Butter Granola Bars

Ingredients

1. 5 cups granola of choice (try my gRAWnola, from the Anna's Organics online store!)

2. 2 cups Almond butter 

3. 4 T melted coconut oil

4. 2 T ground flaxseed

Method 

1. Combine all ingredients in a LARGE (trust me...) bowl and mix very well. 

2. Spray a nonstick baking sheet with coconut or olive oil and press "dough" onto prepared sheet. 

3. Bake at 375 degrees for 30 minutes. 

4. Slice IMMEDIATELY, and allow to cook for 20 minutes. (Trust me on the slice immediately part...they get nice and crunchy, and will completely fall apart if you cut them after they cool!)

5. Use as desired! Store remaining bars in an airtight container for up to 5 days.
