Baked "Zucchini Ziti"


Baked ziti. This was easily my favorite thing to eat growing up. Cheesy, warm, gooey deliciousness...are you reminiscing yet? (I mean, that is, if you've had baked ziti before...if you haven't, well, you were obviously neglected as a child...) My mom made baked ziti in bulk--and boy did I love it when she did!

I was craving baked ziti the other night, but sadly didn't have any pasta noodles...and was too lazy to drive to the store (ok, ok--in my defense...the roads were covered in ice and snow...), but I DID have zucchini on hand cuz #squashlove (I ALWAYS have zucchini on hand--I use it in everything! Smoothies, "zoatmeal, stir-fry dinners...you name it. So good). I saw the zucchini in the fridge and that's all it took for my mind to go crazy. Thus, Baked Zucchini Ziti was born. Hope you all enjoy...the taste AND the memories it brings :)

Baked "Zucchini Ziti"

Serves One

Ingredients

1. One large zucchini squash, chopped

2. 1 cup marinara sauce

3. 1/2 cup ricotta cheese

4. Sea salt, to taste

5. 1/4 cup shredded, part-skim mozzarella cheese

Method

1. Combine chopped zucchini, marinara, ricotta, and sea salt in a large bowl and mix well until thoroughly combined.

2. Spoon zucchini mixture into a medium-sized baking dish and spread evenly. Bake at 350 F for 20 minutes.

3. Remove from oven and sprinkle mozzarella cheese on top. Return to oven and bake for another 10 minutes.

4. Remove from oven and let cool 10 minutes before enjoying.
