Cauliflower Fried Rice


So I'm a day late with this. YESTERDAY was Lunar New Year, but I didn't have time to get this recipe typed out yesterday, cause...SENIOR YEAR Y'ALL. Anyway, I'm just going to have to be fashionably late with this recipe because I HAD TO SHARE! This. Was. Amazing. Literally tasted like the real deal from the Chinese restaurant! And super quick and easy to make, too (and no funky ingredients!). This is where I would normally say "make sure you fix this on Lunar New Year," but since it was yesterday...just make sure you fix this. Often. Hope you enjoy!

Cauliflower Fried Rice

Ingredients

1. 1 cup riced cauliflower

2. 1/3 cup green peas (fresh or frozen)

3. 1/4 cup sliced carrots (fresh or frozen)

4. 3 T chopped yellow onion

5. 2 cloves garlic

6. 1 T soy sauce or liquid aminos

7. One egg

8. Water, as needed

Method

1. Heat a large nonstick skillet over medium-high heat.

2. Add cauliflower, peas, carrots, and onions and dry fry for 2 minutes. Veggies will sizzle--that's ok!

3. Add about 3 T water and soy sauce and let cook down a bit, tossing every now and then with spatula.

4. Crack egg directly into pan and fold into veggies. Keep folding over medium-high heat. Egg will cook right in to cauliflower rice.

5. Keep folding and tossing until all liquid is gone and veggies are sizzling loudly.

6. Remove from heat and arrange on a large place. Serve hot for best taste.
